Fermentation of Mash to Beer
After the mash is cooked and the starch in it has been converted to sugar, the next step is to add yeast to the mash and let the yeast convert the sugar to ethanol. This is done in fermentation tanks. The result is called "beer". The beer is sent to the distillation towers to separate the alcohol.
Temperature needs to be controlled during fermentation. These tanks are the original tanks that came with the installation.

We are lining, sealing, and adding in a gas scrubbing system,
adding a pump mixing system, and adding external shell and tube
heat exchangers to control temperature.
Of these three external tanks on the North side of the facility,
the farthest away is for fermentation. The two nearer tanks are
for beer storage.
